This Gluten-free Dairy-free Bunny Bait is a fun Easter-themed trail mix that is so simple to make. A fun festive snack that is super flexible and always enjoyed by my kids. 

Why We Love This Gluten-free Dairy-free Bunny Bait

First, because it’s so dang flexible! All you need is 8 cups total of mix-ins. I share my favorites in the ingredients section below, but adjust to use your favorites or use up what you have in your pantry.

Second, it’s no-bake and easy even for my 11 year old to make himself. You are just mixing the mix-ins and then tossing them with melted white chocolate. See my tips below to make sure the white chocolate melts as it should.

Third, I *adore* themed food. This spring or Easter-inspired snack or treat has fun pastel spring colors thanks to the pastel dairy-free chocolates and the white chocolate coating. 

Finally, it’s allergen-friendly! I used all items that are gluten-free, dairy-free, nut-free, and egg-free to make sure this was a treat all could enjoy. But, if nuts work for you, then you could use salted nuts as part of the mix-in combination!

Ingredients for Gluten-free Dairy-free Bunny Bait

  • Mix ins – This is the bulk of what makes up my bunny bait. It’s super flexible! You just need 8 cups total. Here is what I used, but make it your own! Add your favorites or use up what you have in the pantry:
    • Corn Chex – Gluten-free with a nice crunch. Feel free to use rice chex or swap out another gluten-free cereal.

Corn Chex Gluten-Free Breakfast Cereal, Family Size, 18 oz. 

    • Honey-nut Cheerios – A classic gluten-free cereal with a fun o shape. And yes, they say right on the box that they are “gluten-free”. You can also use a cheerio-type cereal with simpler ingredients like Lovebird Cereal, which is Paleo.

    • Pretzels – I used Snyder’s Pretzel Sticks, as that is what I found easily and affordably at my local Winco. But there are a lot of gluten-free pretzels out there, like these fun flat pretzels from Walmart. If you prefer a grain-free pretzel option, it does exist HERE, but I haven’t tried them yet to vouch for flavor.

    • Dairy-free “M&Ms” – These can be hard to find. But, the Unreal brand is becoming more and more common. I can find these dairy-free Unreal gems on Amazon or my local natural food store. Definitely dark chocolate, which isn’t my favorite, but otherwise taste great and work well in this mix. 

 

    • Freeze dried fruit or salted nuts – I went with a bag of mixed freeze dried berries from Trader Joe’s for my mix, to keep it nut-free and for the fun color and flavor they add. But salted nuts works well too, if you don’t need this to be nut-free. 
  • Dairy-free white chocolate (see below!)

About That Dairy-free White Chocolate

Anytime I share dairy-free white chocolate, I get a ton of questions. Yes, I really recommend you use WHITE chocolate in this Gluten-free Dairy-free Bunny Bait. It just tastes better and looks more festive for Easter or spring.

You used to be able to get fairly affordable dairy-free white chocolate chips through Walmart, which was AMAZING. But, they sadly discontinued, which was super frustrating!

I have tried *every* dairy-free white chocolate on Amazon. My favorite is hands-down Enjoy Life brand. It tastes “normal” and melts well. Unfortuntely, it’s a little pricey. You can buy a single bag HERE on Amazon (currently $10 a bag), but it’s cheaper to buy it in bulk HERE (currently $7 a bag and be sure to clip the coupon if it’s still there!). I buy in bulk and just use it throughout the year. 

NOTE: The Enjoy Life White Mini Chips will burn easily in the microwave! I melt them on the stove over low heat in a pot, stirring regularly, for 4-5 minutes until smooth. Once chocolate is burned, it CANNOT be fixed! So, proceed with caution.

How to Make Gluten-free Dairy-free Bunny Bait

  • In a large bowl, combine well the mix-ins of choice. Line a rimmed baking sheet with parchment paper.
  • Melt the chocolate. If you are using Enjoy Life Dairy-free White Mini Chips, melt them on the stove over low heat in a pot, stirring regularly, for 4-5 minutes until smooth. Once chocolate is burned, it CANNOT be fixed! So, proceed with caution.
  • Moving quickly, pour the white chocolate over the mix-ins and stir gently but quickly to combine before chocolate cools.
  • Spread mixture onto lined baking sheet into a single layer as much as possible. 
  • Put baking sheet into the fridge to set for 10-20 minutes, until chocolate is solid to the touch. 
  • Once cool, break up and serve in a large bowl. Can be stored on the counter for up to 1 week, or several weeks in the fridge.
